The branch knows what version of the file it was branched off, so even though it only stores the differences they are the differences from a fixed point in time. Branches purely exist to allow you to avoid getting the changes made to the base file, if you want a change in every branch you have to do that yourself. With git you can probably rebase a branch and hopefully avoid getting conflicts. IMO it will make it harder to visualise where the differences are between each rom & will be harder to maintain, but you could do it.
